Leslie’s Jungle Madness Friday!
I can’t believe I’m actually saying this, but as I type I realize it is only TWO weeks until Thanksgiving! Can you believe it? I haven’t even finished cleaning up from the Halloween party!
I love Thanksgiving a LOT. While Halloween is all about throwing open the doors and scaring the little children, and Christmas is about celebrating and gifts, I always find Thanksgiving to be the most quiet, gentle holiday. My strongest holiday memories of my Mother surround Thanksgiving and I am so happy to finally be having a Thanksgiving dinner in my own home again.
To celebrate, here’s a little something to store one of those yummy holiday pies (pecan is my favorite!)

And if OVEREXPOSED has become known as “the cannoli book” I suppose SHE DRIVES ME CRAZY would have to be called “the pecan pie book.” So I’ll throw in a copy of that, too!

In some ways, Thanksgiving is the best, because it’s about family, friends, and feeling grateful, while Christmas is about getting stuff. Oh yeah, and giving stuff and… okay, God. At least that’s how too many of us treat it.

What a perfectly lovely prize! I love pecan pie too, but caramel apple pie can’t be left out either, or pumpkin pie. Okay, I just like pie lol.
I just now got all my Halloween decorations put up too. I’ve got to start dieting now so that I can eat what I want on Thanksgiving. I’m going to have to exercise too, ugh.

Yeah

But now, weekend is ahead of us and you’re doing another awesome contest. Is there any better way? Definitely not. So I’m surely going to enjoy the free time: Reading a great book, sitting in the warm house while the cold wind is blowing around it. The weather here is already pretty nasty. It rains a lot. But I love reading a good book and enjoying hot chocolate.

Thanksgiving and Christmas are probably my two favorite holidays of the year. And OMG THEY ARE JUST AROUND THE CORNER, I havent even thought about gift shopping yet
I love the warm cozy feelings of thanksgiving and chirstmas, I think its the few months out of the year where I try not to let things get me down because its just an all around good feeling in the air….well except for the mad shopping days where moms are fighting
over all the toys in the stores. I tend to stay out of the stores on those days lol

I’ve never been a big fan of pie. Don’t get me wrong, I like pie. I really like pumpkin! Huh, I guess I do like pie. The pie caddy is adorable. MY friend loves pecan pie. She experimented with us last time we had dinner. Poor thing, she wanted our honest opinion. Our honest opinion was that we had never had it before so, her pie was the best pecan pie we had ever had!

I love pecan pie too, but plain ole apple is my absolute favorite type of pie. I have a fabulous recipe for Derby Pie which is pecan pie with chocolate chips and bourbon in it if you are interested.

I love Thanksgiving, because to me its the one holiday that just focuses on family and being thankful for all we are blessed with. Theres no stress of gifts its all about the 3 F’s food, family and fun!! I would insert another turkey here…lol

Don’t put me in the drawing as I would probably never use the pie safe! I love pie, my favorite is probably pumpkin especially for breakfast the morning after Thanksgiving. Thanksgiving is a wonderful day to just get together with family & friends.
Since Veterans Day is Sunday, but celebrated on Monday please take a few minutes out of your weekend to remember all those wonderful men & women that have served our country & especially the ones now serving. Thanks.

Best Pecan Pie (The Classic) Yankee Magazine
Preparation Time: 25 minutes
Start to Finish Time: 60 minutes
Yield: 12 servings
Large whole pecans make a prettier pie but are difficult to cut through when slicing. For a pie that’s easier to slice, use chopped pecans, and save whole nuts for decoration.
1/2 recipe Tender Flaky Piecrust
3 large eggs, slightly beaten
1/2 cup light-brown sugar, packed
1 cup light corn syrup
1 teaspoon vanilla extract
1/8 teaspoon salt
4 tablespoons (1/2 stick) melted butter
1 tablespoon Kahlua or rum (optional)
2 cups chopped or whole pecans
Whipped cream or ice cream
Preheat oven to 375 degrees F. Lightly flour your work surface and roll out one disk of dough into an 11- to 12-inch circle. Transfer dough into a 9-inch glass pie plate. Finish edges, then place pie shell in freezer while you prepare the filling.
In a large mixing bowl, whisk together eggs and brown sugar. Slowly add corn syrup, vanilla extract, and salt, blending until smooth. Whisk in melted butter and Kahlua or rum (if using). Stir in pecans. Remove pie shell from freezer; pour pecan mixture into the shell. Bake 35 to 45 minutes, or until edges are firm and pie stops jiggling in the center. You may want to shield the edges of the crust after 15 minutes to prevent overbrowning. Cool overnight. Serve at room temperature with freshly whipped cream or ice cream.

I absolutely love love love pecan pie! When I was a kid my dad used to buy us kids those teeny one-serving pecan pies. Once in a while I still buy those. Yummm!
